The best toasted sandwich I ever made was a simple cheddar cheese one made at god knows what time in the middle of an acid trip. It was the most synaesthesically complete cheese experience I have ever had and I will never ever be able to recreate it. The cheese self-actualised.
I think of that damn cheese every time I make a toastie or cheese on toast. It was probably inexpensive block cheese and it was certainly made with bread from a supermarket white sliced but I swear to God, when I ate it, my neurons felt as if they had their own rapid-firing taste buds.
Listen, it sounds nutty but if you squish the bread down into the pockets of a traditional toastie maker, you can quite happily crack a smallish egg in there. Cover egg with cheese (aye, them's the toastie rules), pop another slice of bread on top ASAP and cook it for 3-5 minutes. You'll end up with a cheesy egg toastie with cooked whites and a gloriously runny yolk. I like to put quick pickled onions in mine too because I always have them hanging around in the fridge but I'm sure any acidity from something like Branston or even lime pickle would work well with the gooey cheese egg fest.
Yes my dad used to make these, albeit without the cheese. Obviously you need a toastie machine with a square shape, not the triangular cut, otherwise the egg won't fit. Once it's done, you cut the square out of the top to access the yolk, and cut off the four excess sides of the toastie for soldiers. Use salt and white pepper for seasoning.
Amazing sarnies! I'm obsessed with doing toasties in the griddle pan at the moment. Tons of butter on both sides of bread and some heated in the pan also. Then I put 2 slices of Swiss, half a ball of mozza, thoroughly squeezed, and a load of shredded ham hock. It slapped like crazy but was a bit burnt. Sweet onion chutney would've been good in there. God I'm starving now!
But also in the dorms at school as a treat for getting good marks as a house we got a toastie maker for each kitchen. Bread, butter and fruit were all provided, so it was a quick hack with a bar of chocolate for the best chocolate banana toasties!
As a kid I loved a cheese & tomato toastie made in a proper toastie machine - but you need to watch out for the tomato because some how it ends up hotter than the surface of the sun. As an adult thatβs a risk I only take occasionally!
My current favourite is chicken, bacon, onion & cheese.

Leftover curry, heated and sealed in a brevel machine between cheap white bread is pretty special.
I would highly recommend checking out some of George Egg's toasted sandwich creations. He does a great sweet one with Tunnocks Tea cakes.

My Dad's go to has always been beaten egg, tomato and cheese, I just amped it up a bit (and took out the cheese I can't eat!)
